Raw vegan pesto with fresh tomato
A delicious combination of raw, fresh ingredients and gluten free pasta. Ingredients 1 1/2 cup Cooked pasta (your choice – gluten free rigatoni pictured)
1 roma tomato chopped
1/2 cup cilantro
1 lime, juiced
2 TBS Extra Virgin Olive Oil
2 TBS raw sun flower seeds
Salt and pepper to taste Directions -Serves 1
Place cilantro, lime, olive oil, sun flower seeds and salt and pepper in a blender or food processor. Blend ingredients until smooth. Spoon over pasta and tomatoes
